Somehow I think that whoever did the translation thought that perhaps we don't have those here and so they substituted maraschino cherries - absolutely NOT the same thing - as I've found that same substitution in another recipe or two that should contain candied cherries. While I didn't go thru the entire index, the one recipe I noticed that is different than the original is the Pavlova. To be honest, I’m sure that some of these categories could be merged but I felt it was worth including the list to show just how extensive this book is – ‘bible’ is most definitely the right word.

The recipe introductions are on the fluffy side (I'd have liked more background/history) and only half of the recipes include photographs, which is a shame from a visual perspective as well as that of the home baker, who might like to know what the finished product should look like. With beautiful photography and easy-to-follow instructions, this timeless classic is a must have for every baker, big and small.I just used two types of raisins, currants, dried cherries and almonds, increasing amounts to get the same weight of fruits and nuts. The list of recipes I’ve baked from Mary Berry’s Baking Bible is so long that it’s most definitely one of my most used cookbooks. I use quite a lot of recipes by Mary Berry, as always find her recipes are simple to make and the majority of ingredients are inexpensive to purchase.
